We’re smokin’ in the Boonies, again.

Started smoking last night at midnight. Seriously.

A mighty fine sign indeed.

And, yes, we cleared this with the dietician.

Our friends who typically hold their 4th of July bash on the 4th of July have thrown us and themselves a curve ball this year: they have a fabulous 4th planned alright, but, it’s out of town. The lengths some people will go to ditch their friends….

No, seriously, it’s all good, because we’re getting together today, before they leave, and my sweet Big Bison of a husband volunteered to bring his Butt.

Pork shoulder.

Whatever.

We’re bringing ribs, as well.

We’re trying a different rub today: the rub I usually put on the ribs that I usually make around Memorial Day, when we’re not busy with one of us having a heart attack.

Which kind of puts a damper on things.

Anyway, here is What’s For Dinner today. Like I said: this is dietician approved, for an occasional treat/celebration, and if you can’t celebrate the 4th, well, you might just not be an American. (But I’m good with that: all international readers welcome!)

Butt Rub #2

Big Spices for a Big Butt


(OK, admit it: linking #2 with Butt Rub is funny, in an adolescent kind of way)

I put this on ribs, and today, on butt. Boston Butt, that is. because elsewhere would be…uncomfortable.

2 T. ground cumin
1 T. chili powder
1 T. dry mustard
1 T. kosher salt
1/4 t. cayenne
1 1/2 t. ground cardamom
1 1/2 t. ground cinnamon

I bought "Butt Rub" for Wookie and put it in his stocking, saw it online where I bought the fuel from (weirdly no one stocks bbq fuel just before christmas here...) and he's smiled/laughed every time he opens the spice/coffee/tea cupboard and seen it. The package says, "Everything is better with a little butt rub" :)

Ohhh and that peach recipe - pffft I bought six the other day for an extra ordinary amount of money and thought of you :sigh:

Thanks for the rub recipe! I have pork whatever-cut-you-want (mostly) but no talent in the grilling dept and absolutely NOTHING in the smoking dept. My friend's dh just got a smoker. I said I'd furnish the meat if he'd fix it and invite us over. :) (He & my dh are friends too.) That was a week ago. What IS their problem??? heehee
